Instructions
In a medium bowl, pour ½ cup cold juice and sprinkle 1 tbsp unflavored gelatin on top. Let it sit for 5 minutes to bloom.
Meanwhile, warm 1 cup juice in a saucepan over low heat until steaming, do not boil.
Pour hot juice over the bloomed gelatin mixture. Whisk until completely dissolved and smooth.
Add monk fruit or stevia to taste (optional).
Pour the mixture into ramekins or a glass container. Refrigerate for at least 2–3 hours, or until firm.
Enjoy chilled. Store covered in the fridge for up to 5 days.
Notes
