Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 1 can cream of mushroom soup
  • 2 cups shredded cheddar cheese, divided
  • 2 cups frozen mixed vegetables
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 32 oz frozen tater tots

Instructions

  • Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain excess grease.
  • Add the cream of mushroom soup, mixed vegetables, garlic powder, salt, pepper, and 1 cup of shredded cheddar cheese. Stir until fully combined.
  • Transfer the beef mixture to the prepared baking dish and spread into an even layer.
  • Arrange the frozen tater tots evenly over the top in a single layer.
  • Bake for 35 to 40 minutes until the tater tots are crispy and golden brown.
  • Sprinkle the remaining cheddar cheese over the casserole and return to the oven for 5 minutes until melted.
  • Allow the casserole to rest for 5 minutes before serving.

Notes

For extra flavor, use sharp cheddar cheese and avoid thawing the tater tots before baking. Drain the beef thoroughly to prevent a greasy casserole. Let the casserole rest for 5 minutes before serving so the filling can set properly. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
