Equipment

  • 1 Saucepan Medium-sized, for boiling mix
  • 1 Wooden spoon For stirring the mixture
  • 1 Parchment paper For cooling cookies
  • 1 Cookie scoop Optional, for portioning

Ingredients

  • ½ cup Unsalted butter 1 stick
  • 2 cups Granulated sugar
  • ½ cup Whole milk
  • ¼ cup Unsweetened cocoa powder Natural cocoa
  • ½ cup Creamy peanut butter Not natural
  • 1 tsp Vanilla extract
  • 3 cups Old-fashioned oats Quaker recommended

Instructions

  • Line a baking sheet with parchment paper.
  • In a saucepan over medium heat, combine butter, sugar, milk, and cocoa powder. Stir until melted and smooth.
  • Bring to a rolling boil. Boil for exactly 60 seconds, no more, no less.
  • Remove from heat and immediately stir in peanut butter, vanilla, and oats.
  • Mix until fully coated and glossy.
  • Drop spoonfuls onto parchment paper using a spoon or scoop.
  • Let cookies cool at room temperature for at least 30 minutes, or until firm.

Notes

Store cookies in an airtight container for up to 7 days at room temperature or freeze for up to 3 months. For a firmer cookie, chill in the fridge. Add shredded coconut or nuts for fun variations!
