Brew your tea and let it cool slightly.
In a bowl, add ½ cup of the tea and sprinkle gelatin evenly on top. Let bloom for 5 minutes.
Meanwhile, heat the remaining 1 cup of tea until hot but not boiling.
Pour the hot tea over the bloomed gelatin and whisk until fully dissolved.
Stir in lemon juice, salt, and sweetener. Taste and adjust as needed.
Pour the mixture into molds or small jars. Refrigerate for at least 2 hours or until set.
Serve chilled, ideally 15–30 minutes before meals.
