Ingredients

  • 2 tbsp unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup fresh lemon juice
  • 1 tbsp raw honey or natural sweetener

Instructions

  • In a small saucepan, pour cold water and sprinkle gelatin evenly over the surface. Let sit for 2–3 minutes until bloomed.
  • Add lemon juice and honey to the saucepan.
  • Heat gently over low heat, stirring until gelatin fully dissolves. Do not boil.
  • Pour mixture into a glass dish or molds.
  • Refrigerate for at least 45 minutes until fully set.
  • Cut into portions or scoop into bowls and serve chilled.

Notes

Do not boil gelatin to preserve its protein structure. Adjust sweetness to taste or use a sugar-free alternative for low-carb diets. Store in the refrigerator for up to 4 days. Best consumed between meals or before dinner.
