  • 1 Large mixing bowl For tossing everything
  • 1 Pot To boil the pasta
  • 1 Strainer For draining the pasta
  • 1 Cutting board For prepping veggies
  • 1 Knife Sharp knife for slicing

Ingredients

  • 8 oz rotini pasta Or any short pasta of choice
  • 1 cup cherry tomatoes Halved
  • 1 cup cucumber Diced small
  • 3/4 cup feta cheese Crumbled
  • 1/3 cup Italian dressing Store-bought or homemade
  • Salt To taste
  • Black pepper Optional for seasoning

Instructions

  • Boil the pasta:
  • Cook rotini pasta in salted water according to package directions. Drain and rinse under cool water.
  • Prep the veggies:
  • While pasta cools, slice cherry tomatoes and dice cucumber.
  • Combine ingredients:
  • In a large mixing bowl, add the cooled pasta, tomatoes, cucumber, and feta.
  • Add dressing:
  • Pour in Italian dressing and toss until everything is well coated.
  • Chill and serve:
  • Let the pasta salad chill for at least 30 minutes. Toss again before serving and adjust salt or dressing if needed.

Notes

This pasta salad recipe can be doubled for larger crowds.
For extra protein, toss in chickpeas, grilled chicken, or hard-boiled eggs.
Want a creamier version? Swap Italian dressing for a mix of Greek yogurt and lemon juice.
