Method
- Make the Dough
- Whisk flour and salt in a large mixing bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Add ice water, 1 tbsp at a time, until dough forms.
- Divide into 2 discs, wrap, and chill for 1 hour.
- Prepare the Filling
- In a skillet, cook apples with lemon juice, sugars, spices, and cornstarch for 10 minutes.
- Let filling cool completely.
- Assemble the Pie
- Roll out one dough disc and fit into a 9-inch pie dish.
- Fill with cooled apple mixture and dot with butter.
- Roll out second crust, lay over top, and crimp edges. Cut slits for venting.
- Egg Wash & Bake
- Brush top with egg wash and sprinkle with sugar.
- Bake at 425°F for 15 minutes, then reduce to 375°F and bake 40–45 mins.
- Cool completely before slicing.
