Method
- Place a fine-mesh sieve over a small bowl and add the matcha. Gently push the powder through the sieve until you have a soft, fine layer of vivid green matcha without compacted lumps.
- Pour 2 ounces (¼ cup) of water over the sifted matcha. The water does not need to be boiling; comfortably warm water works well for this iced latte.
- Whisk briskly with a bamboo chasen in a back-and-forth zigzag motion until smooth and lightly frothy, with no dry matcha pockets or dark green lumps. A handheld milk frother can also be used.
- Add about 1 generous cup of ice to a tall glass. Fill most of the glass with firm ice cubes so the latte chills quickly.
- Pour ¾ to 1 cup cold milk over the ice. Use ¾ cup for a stronger matcha flavor or closer to 1 cup for a softer, milkier latte.
- Slowly pour the freshly whisked matcha over the ice and milk. Stir to combine the green matcha and creamy milk evenly.
- If desired, add about 1 teaspoon of your preferred sweetener, stir, and taste before adding more. Simple syrup, maple syrup, or honey can be used. Serve immediately.
Notes
Sift the matcha before whisking to prevent clumps. Avoid freshly boiling water, which can bring stronger bitter notes forward. For a stronger matcha flavor, use ¾ cup milk; for a softer, creamier drink, use closer to 1 cup. Fill the glass generously with firm ice and serve immediately. Whole, oat, almond, soy, or coconut milk can be used. Simple syrup, maple syrup, or honey may be added to taste.
