- Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish.
- In a large skillet over medium-high heat, cook the diced onion until softened. Add the ground beef and cook until browned. Drain excess grease.
- Stir in the taco seasoning, drained Rotel tomatoes, corn, and black beans. Cook for about 3 minutes until combined.
- In a separate bowl, combine the sour cream and cream of chicken soup until smooth. Stir this mixture into the beef mixture.
- Spread half of the crushed Doritos across the bottom of the prepared baking dish.
- Spread half of the meat mixture over the Doritos and top with 1 cup of shredded cheddar cheese.
- Repeat the layers with remaining Doritos, meat mixture, and cheese.
- Bake uncovered for 25 to 30 minutes until the cheese is melted and lightly golden around the edges.
- Let the casserole rest for 5 minutes. Top with fresh crushed Doritos, cilantro, and green onions before serving.
Notes
Drain the ground beef and Rotel tomatoes well to prevent sogginess. Do not crush the Doritos too finely; larger pieces provide the best texture. For maximum crunch, sprinkle additional crushed Doritos on top after baking. Store leftovers refrigerated for up to 4 days. Freeze the filling separately and add fresh Doritos before baking.
