Method
- Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain excess grease.
- Add the cream of mushroom soup, mixed vegetables, garlic powder, salt, pepper, and 1 cup of shredded cheddar cheese. Stir until fully combined.
- Transfer the beef mixture to the prepared baking dish and spread into an even layer.
- Arrange the frozen tater tots evenly over the top in a single layer.
- Bake for 35 to 40 minutes until the tater tots are crispy and golden brown.
- Sprinkle the remaining cheddar cheese over the casserole and return to the oven for 5 minutes until melted.
- Allow the casserole to rest for 5 minutes before serving.
Notes
For extra flavor, use sharp cheddar cheese and avoid thawing the tater tots before baking. Drain the beef thoroughly to prevent a greasy casserole. Let the casserole rest for 5 minutes before serving so the filling can set properly. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
